Hi GymBeat Family,

It's march, and we're starting to head into spring! We've got some exciting results to share with you from some of our team's competitions. Along with that, we have our coach of the month and two amazing athletes of the month to share! So, without further ado, enjoy!

Staff of the Month

Joe Softich

Our general manager Joe, is a man of many talents! Joe not only owned his gymnastics facility up in Washington state for over 30 years, his constant passion to keep improving and remodeling in order to make use of empty space shows wherever he goes, is impressive! He not only has amassed tons of technical, artistic, and ‘just let me work’ attitude from over decades of experience, he is currently having so much fun helping out everyone here at our very own gym! Since the pandemic closed our facility last year in March, Joe has transformed the interior of our gym to something more colorful, more space-efficient, and is contributing to the re-birth and re-branding of Gymnastics Beat as we’re about to fully open soon! Thank you Joe for all of your help in making our place something we couldn’t imagine over a year ago!

Athletes of the Month

Ariel Andrade

Ariel is 8 years old and is in 2nd grade. She is currently taking cheer-tumbling class 1abc with coach Bailey and Michael. Ariel first started back in 2016, when she was only 3, and just loves to do handstands and cartwheels! While taking this tumbling class, Ariel hopes to get stronger and master the skills to keep moving up to higher levels! Outside of the gym, Ariel plays piano, enjoys baking, and creating tons of arts and crafts. Her favorite place to visit is the beach while vacationing in Mexico. She is an animal lover and who wouldn’t have guessed with 3 dogs plus a cat, which recently produced 4 adorable kittens! Thank you for taking care of them Ariel, they need your love!!

Dallas Evans

Dallas is 8 years old and is in 3rd grade. He has been attending our gym for the past 4 years taking various classes such as ninja white, ninja yellow, participated in lots of camps, and joined teams: prep-novice and novice. He is currently under the direction of coaches Bailey and Michael. Dallas loves to work on his favorite skill: ‘front-walkover' and wants to perfect his ‘back-walkover’. Eventually, his goal would be to join an elite team with our Pyramid Athletics Cheer! Dallas has 3 dogs named Tianna, Kailani, and Pua. Outside hobbies include playing the ukulele and Polynesian drums! Since we’re on a kick with Hawaiian pet names and instruments, next time you travel to the beaches of Hawaii, show off your tumbling and flexible skills! Maikaʻi laki a me pono ka manaʻo! (means good luck and best wishes!)

Sam's Corner

Well, now that March has ended and we’ve competed in several local and national competitions virtually, here are just a few results. Recipe of the Month

Pistachio Oat Bars

Recipe by Love & Lemons

  • 1 cup raw shelled pistachios

  • 1 cup whole rolled oats

  • ½ teaspoon sea salt

  • ¼ cup maple syrup, more for drizzling on top

  • 2 tablespoons olive oil

  • ⅓ cup unsweetened coconut flakes

  • additional handful of chopped pistachios for the topping.

  1. Preheat the oven to 350 degrees and line an 8-inch square pan with parchment paper. In a food processor with the S blade attached, process the pistachios, oats, and salt for about 30 seconds, until a meal starts to form. Drizzle in the maple syrup and olive oil while the motor is still running and the meal begins to come together into a crumbly, almost-wet dough.

  2. Press the dough evenly into the pan and cover it with coconut flakes and remaining pistachios. Bake for 10 to 12 minutes until the coconut is nice and golden brown and the dough is cooked through. You want the squares to still be a little soft - don't overbake these.

  3. Carefully lift the cooled dough out of the pan by holding two sides of the parchment paper. Cut it into squares. Drizzle a little maple syrup over the top for extra sweetness, if you like. Store the squares in a sealed container for up to a week.

  4. Enjoy!
